Recipe – Caramelized Banana Cheesecake

This upside-down cheesecake has a banana base, a filling of cream cheese that is studded with whiskey raisins and a topping made of crushed oatcakes.
Preparation time: 25 minutes
Cooking time: 10 minutes
Ingredients
Caster sugar: 55 grams
Whole star anise: 1
Bananas: 2
Butter: 1 tablespoon
Crushed oatcakes: 2 tablespoon
Brown sugar: 3 tablespoon
For the Filling
Sugar: 50 grams
Whiskey: 25 ml
Raisins: 2 tablespoons
For the Topping
Cream cheese: 150 grams
Caster sugar: 1 tablespoon
Vanilla extract: 1 or 2 drops
Double cream: 200 ml
Preparation
In a pan, place caster sugar and star anise and add one tablespoon of water. Heat until it gets caramelized. Now, cut the bananas into diagonal pieces. Put the pieces into the pan and add butter and shake for about a minute or two. Transfer the mix on to a plate and allow it to cool.
To prepare the filling, boil sugar in 50 ml of water in a saucepan. Add whiskey and raisins. Take the saucepan off the stove and leave it for cooling and infusing.
To make the cheesecake, take a bowl and mix sugar and cream cheese together till sugar dissolves completely. Drain the raisins and beat them along with vanilla into cream cheese.
In another bowl, whip the cream till soft peaks start forming. Then fold it into cream cheese mixture. Use a spoon and place it on the banana pieces. In a pan, add brown sugar and crushed oatcakes and dry fry till it becomes golden-brown. You can sprinkle this mixture on top of cheesecakes.
